Ever had the best intentions for your veggies only to have it wilt (pun intended)? Last week, I had my usual meal plan, but life happened and I didn't use all of the veggies that I purchased before going out of town for the weekend. Today as I went into the crisper drawer in the fridge, I pulled out my sad bunch of kale that was supposed to be used to make one of my delicous kale salads. Luckily I know a secret on how to bring my kale (and other veggies) back to their glory days so that I don't have to throw food (and money) away.
As most of you know, vegetables have a very high water content. As they dry out from exposure to air (even in the crisper drawer), they will start to wilt or dry up in general because their cell walls start to sag. Here's how you can revive your veggies in as little as 20min (for some) using plain, cold water:
Give it a try the next time you think about tossing your wilted or wrinkled produce! Here's how my kale looked after being brought back from the dead: Losing 17lbs in less than 2 months is an amazing feat in and of itself, but to do it while traveling 2-4 days out of the week every week is almost unheard of.
Now imagine that happening while eating out at restaurants and making things like pizza, wings, tacos, beef & broccoli and nachos you'd think that I was downright lying to you. However, the proof is in the pictures! Meet my fab client N. Woods. She's a 40-something professional who travels for work 2-4 days out of the week. She came to me with the goal of losing 20lbs in 90 days and more specifically losing belly fat and kicking her sugar and carb cravings. The traveling, dining out, business function foods, and lack of exercise had caught up to her and she wanted change, like now! So, I started her off with my 14 day jump-start nutrition program where she lost 8lbs, 3% body fat and 2.4 inches off her stomach alone! After the jumpstart, I slowly incorporated foods she enjoyed back into her meal plan. We did weekly meal and recipe planning for when she was home and I searched restaurant menus nearby where she traveled and gave her healthy options. For our workouts, we met up 2 times a week when she was home for 40min workouts and I created online workouts for her for the hotel gyms while she traveled. In as little as 7 weeks together, N. Woods is a completely different person! Not only physically, but mentally as well. She no longer claims to be a carb or sugar addict and she actually enjoys cooking the meals she eats and saving money by not wasting groceries by over purchasing.
